Pecador Negroni

Bittersweet and smoky, three parts in balance — the Italian aperitif reborn in Oaxaca with Somos Pecadores. Equal parts, one rock, slow stirred.

Method

  1. Pour the mezcal, Campari, and vermouth into a mixing glass — equal parts, no need to measure twice.
  2. Add a dash of orange bitters, then fill the mixing glass with cubed ice.
  3. Stir slowly for half a minute. Listen to the ice — you want the drink silky, not aerated.
  4. Strain over a single large rock in a chilled rocks glass.
  5. Take a strip of orange peel, squeeze it over the surface to release the oils, briefly pass it through a flame, then drop it in.
